Why when I update the latest version am I required to re-enter the "Product Key" surely any updates will take into account the fact that I have already purchased the original product?
In addition where would I find my original "Product Key"

Generally speaking, if a proper update is conducted, there is no need to re-enter the key. Also, in case you will ever need the key again, it can always be found under your account at the store you purchased it from.
